Apple Bacon Pork Chops

These melt in your mouth pork chops are smothered in caramelized apple, bacon and onion and cooked to perfection. Serve with mashed potatoes, gravy and your favourite side of veggies for an irresistible country-style meal.

The inspiration for this dish came from a childhood memory of dipping my pork chops in apple sauce. Does anyone else eat them like this? So I took it a step further and created an apple, onion, bacon chutney to smother the pork chops in, and it was a hit!

With most of us being in isolation right now, I opted for pork chops because they are budget friendly, delicious, and will feed a family. The cut of chops I used were boneless pork chops, which are my favourite for frying up. This cut of pork is also common, so they should be easy to find.

My Husband and I had to go on a grocery run yesterday and we were pleasantly surprised at how organized our local grocery store Sobeys was.

There was a lineup outside with markers to keep everyone 6 feet apart. They also had someone working at the lineup to make sure people were steadily moving. We followed markers throughout the entire store with arrows like you would see in Ikea so people weren’t running into each other.

I hope that most grocery stores are following suit to keep everyone safe. A lot of our grocery delivery services here at the moment are experiencing big delays, but if you have the option get your groceries delivered, I would highly recommend doing that.

These are scary times for all of us, but especially the elderly and immune compromised, but if we all work together, we will get through this!

Here’s how to make Apple Bacon Pork Chops:

Start by preheating the oven to 400°F. Sprinkle both sides of the pork chops with salt, pepper, onion powder, garlic powder, and cinnamon. Set aside.

For the chutney, in a large non-stick frying pan (I used a cast iron), add the butter and let it melt over medium heat. Once melted, add the diced onions, apple, and sliced bacon. Sauté until the onions are caramelized and the bacon is crispy. This will take approximately 20 minutes.

Transfer the bacon, apple and onion mixture to a bowl and return the pan to the burner, turn up the heat to medium/high. You want the pan to be hot. You can test this by adding a drop of water to the pan, if it loudly sizzles, it’s ready for the pork chops.

Add the pork chops to the pan and fry for two minutes on each side. If using a cast iron, keep them in the pan, or transfer to a baking dish and cover with the chutney, spreading it evenly over top of the pork chops. Place in the oven and cook for 10 minutes.

After 10 minutes remove from the oven and check for doneness. It is okay for pork chops to be a little pink in the middle still, but if you would prefer them to be well done you might need to add them back to the oven, checking them every few minutes. If you have a meat thermometer, the recommended temperature is 145°F.

That’s it, they’re done! Serve with sides of your choice and enjoy!

  • 4 slices of raw bacon chopped
  • 1 tbsp butter
  • salt
