Remember chicken pot pie? Of course it hasn’t gone anywhere, but this comfort dish brings me all the way back to my childhood. This Chicken Pot Pie Noodle dish features chicken pot pie filling with egg noodles instead of the pastry top. A simple yet delicious one pan comfort food that will feed a family of 6.

How’s quarantine going? I’ve been finding things to be a bit easier now that the weather is getting nice again. With my Husband working at home now, we’ve been taking our dog Brutus out for daily lunchtime adventures.

There is a huge field right behind our place and some train tracks that run behind the field. We took Brutus there today for a run. There’s rarely anyone else back there, so it’s the perfect spot to go right now. I was even thinking about taking a blanket back there to sit on and maybe do some reading in the sunshine.

Even though the weather has been nice, it would still be lovely to see and hug my family and friends again. Life is so strange right now, but we’re making the best we can of the situation and I hope you are too.

One positive I have taken from this situation is that I actually have time now to do things that I enjoy. Cooking used to be a chore for me because I would work for 8 hours, come home, cook dinner, and by the time all was said and done it was already almost bed time. It’s no wonder so many people order in take out.

Cooking lately has been such a joyful experience. Almost even meditative. Having the time to actually put my soul into my creations has been a game-changer.

One promise I have made to myself, is that when this is over, I will not go back to “normal”. I hope that if you are at home with your family during this crisis, you are also taking the time to find your joy, whatever it may be.

Now let’s talk about this dish! Whether you’re still at work or not, this Chicken Pot Pie Noodle dish is quick, feature simple ingredients, won’t use up a ton of dishes, and is super tasty.

Here’s how to make Chicken Pot Pie Noodles:

Add water and a few shakes of salt to a large pot and bring to a boil. Once the water is boiling, add the egg noodles and cook until done.

While the noodles are cooking, in a large skillet over medium-high heat, add olive oil, chopped chicken, salt and pepper. Cook until the chicken is thoroughly cooked through.

Transfer the cooked chicken to another dish and set aside.

Melt butter in the same skillet over medium high heat, then add the onions, garlic, carrots , celery and sage. Cook until the vegetables begin to soften.

Add the chicken back to the skillet, then stir in the peas.

Shake the flour evenly over the veggies and stir. While stirring add the chicken stock. Continue stirring until the sauce begins to thicken.

Stir in the cream, then the drained noodles. Once combined, remove from heat. Serve and enjoy!

Ingredients
  

  • Enough water to fill a large pot
  • 6 oz broad egg noodles (I used half of a 12 oz bag of No Yolks Extra Broad Egg Noodles)
  • 2 chicken breasts
  • 1 tbsp olive oil
  • dash of salt & pepper
  • 3 tbsp butter
  • 3 large carrots chopped
  • 3 stalks of celery chopped
  • 1 medium onion chopped
  • 2 cloves of garlic minced
  • 1/2 cup frozen or canned peas
  • 2 tbsp chopped fresh sage (or 1/2 tsp of dried sage)
  • 1 cup chicken stock
  • 2 tbsp all purpose flour
  • 1/2 cup heavy cream

Instructions
