We’re trying to do a new “Meatless Monday” thing in our home to cut down on our meat consumption. I realize it’s not Monday, although I wouldn’t know that if it wasn’t for my phone. I made this dish this past Monday for a super late 11pm dinner. Our schedule is so messed up right now.

Cauliflower is such a great vegetable for so many reasons! You can make almost any carb out of it, even pizza. When my Husband tried these, he said he could barely tell they weren’t meat. I don’t know if I’d go that far, but I’d say these are definitely the next best thing.

This is the first time I’ve ever “crisped” cauliflower. Believe it or not, it’s baked, not fried and it still came out super crispy. The texture was definitely wing-like, and the sauce is so tasty I could have eaten it alone with a spoon. If you want to just make the sauce and do that, I won’t tell anyone.

The sweetness and stickiness in the sauce all come from the bees and the trees: honey and maple syrup. This means no processed sugar!

Here’s how to make Crispy Honey Garlic Cauliflower Wings:

Preheat oven to 450°F

Break up a medium head of cauliflower into bite sized pieces and rinse. Set aside.

In a medium sized bowl, whisk together the flour, milk, salt, pepper, garlic powder.

In a second bowl add the breadcrumbs.

Use a fork to dip each cauliflower piece into the flour mixture and then the breadcrumb mixture. Transfer each coated piece to a cookie sheet.

Once all of the pieces are coated. Place the cookie sheet in the oven and bake for 23 minutes.

While the cauliflower is baking, it’s time to make the sauce.

In a small pot over medium heat combine low sodium soy sauce, honey, maple syrup, garlic and apple cider vinegar. Bring to a boil.

In a small bowl combine water and cornstarch.

Once the sauce is boiling, stir in the cornstarch mixture. Continue boiling until the mixture begins to thicken (approx. 5 mins.). Remove from heat.

Once the cauliflower is done baking, add to a large bowl and pour the honey garlic sauce over top. Toss gently to coat.

Serve over rice or just eat them alone. These don’t store well, I mean they’ll still taste good, but they lose their crispiness, so plan to eat them all in one sitting.

Enjoy!
