I’m a sucker for a salad, and this simple Strawberry Spinach Salad with Maple Poppyseed Dressing has been one of my faves for years. Don’t get me wrong, I’m about as carnivorous as a T-Rex, but every meat dish needs a good salad on the side.

I don’t normally like spinach, this is actually one of the only ways I’ll eat it and it’s gotta be as fresh as possible. I’m not a picky eater by any stretch, but spinach is one of the rare things I’m picky about. I also don’t mind it in smoothies or a good spinach dip. That’s about as far as my love for spinach goes though. What are some foods you’ll only eat specific ways?

If you absolutely don’t love spinach, you can use romaine instead, it will be equally as delicious.

Strawberries are one of my favourite summer fruits. Obviously you can get them any time of the year, but I find during the winter, here in Canada anyway, the strawberries just aren’t the same as in the summer. I was stoked to find a big container of them on sale the other day at Costco. Not only do they jazz up so many dishes, but they also make a great anytime healthy snack.

Speaking of being healthy, I know quarantine has been making that quite difficult for a lot of us, so I’m going to TRY to start adding some more “healthy-ish” recipes over the next little while.

The dressing in this recipe is made up of 4 very simple ingredients and it’s super tasty! All you’ll need is mayo, apple cider vinegar, maple syrup, and poppy seeds. That’s it!

Here’s how to make Strawberry Spinach Salad With Maple Poppyseed Dressing:

In a large bowl add the spinach, sliced strawberries, sliced cucumbers and chopped red onion. Set aside.

In a small dish combine the mayonnaise, apple cider vinegar, maple syrup, and poppyseeds. Stir well.

Pour the dressing over the salad and toss to combine. Serve and enjoy!

Ingredients
  

  • 10 oz fresh baby spinach
  • 1 lb fresh strawberries hulled and sliced
  • 1/2 medium red onion chopped
  • 1 long english cucumber cut in half lengthwise and then sliced

Maple Poppyseed Dressing

  • 1/2 cup Mayonnaise
  • 3 tbsp apple cider vinegar
  • 2 tbsp real maple syrup
  • 1 tbsp poppy seeds

Instructions
 

  • In a large bowl add the spinach, sliced strawberries, sliced cucumbers and chopped red onion. Set aside.
